Ingredients
Marinade:
2 Tablespoons Champagne vinegar
1 small shallot, minced
One 2-inch piece of ginger, peeled and finely grated
3 Tablespoons Extra Virgin Olive Oil
½ teaspoon Sea Salt (adjust to taste)
One 5-pound seedless watermelon, cut into 4” x 1″ rectangles without the rind
Topping:
1 Tablespoon pink peppercorns
1+½ teaspoons black peppercorns
1 teaspoon sumac
½ teaspoon cayenne
Whipped Feta Dip:
1-pound feta cheese, preferably Greek
¼ cup Extra Virgin Olive Oil
Garnishes:
⅓ cup lightly packed torn basil leaves
⅓ cup lightly packed torn mint leaves
⅓ cup lightly packed chopped tarragon leaves
Flaky sea salt like Natural Flaky Greek Sea Salt
Instructions
Prepare the Marinade: Mix vinegar, shallot, ginger, olive oil, and sea salt. Marinate watermelon for 30 minutes.
Prepare the Topping: Toast and grind pink and black peppercorns. Mix with sumac and cayenne.
Make the Whipped Feta Dip: Blend feta in a food processor with olive oil until smooth.
Assemble the Salad: Spread feta dip on a platter, arrange marinated watermelon on top. Drizzle with marinade, sprinkle with spice mix, garnish with herbs and sea salt.
Notes
Salt in the marinade: Adjust to taste considering the saltiness of the feta and the additional sea salt garnish.
