Maple Pancake Poppers are a fun and delicious twist on traditional pancakes. These bite-sized pancake balls are stuffed with a warm, gooey maple syrup center and perfect for dipping into extra syrup or powdered sugar.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup (for filling)
  • Extra maple syrup (for serving)
  • Powdered sugar (optional, for dusting)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be thick.
  4. Heat a deep fryer or pot of oil to 350°F (175°C). You want the oil to be hot enough so that the pancake poppers cook evenly and turn golden brown.
  5. Use a spoon to carefully drop small spoonfuls of the batter into the hot oil, making sure to create little pancake balls.
  6. As the poppers cook, carefully spoon about 1/2 teaspoon of maple syrup into the center of each one before they are fully set.
  7. Once golden brown and cooked through (about 3-4 minutes), remove the poppers from the oil and place them on a paper towel to drain any excess oil.
  8. Serve warm with extra maple syrup or a dusting of powdered sugar for an added touch.
