Ingredients

Chicken and Marinade

  • 2-2.5 pounds chicken breast, cubed 1-1 ½ inches
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons red wine vinegar
  • 3 tablespoons Greek yogurt or dairy-free yogurt
  • 4 garlic cloves, finely minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 ½ teaspoons dried oregano
  • 2 teaspoons dried parsley
  • 1 teaspoon dried chives
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Skewers, soaked in water

Garnish and Sauce

  • Lemons, for squeezing and optional grilling
  • Fresh basil leaves
  • Tzatziki sauce (store-bought Good Foods Plant Based Tzatziki Style Dip or vegan version from Trader Joe’s)

Optional Tomato Cucumber Salad

  • 2 large cucumbers, peeled and sliced
  • 2 cups cherry tomatoes, halved
  • 1/2 cup chopped red onion
  • 1 tablespoon olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon Italian seasoning
  • 1 clove garlic, minced
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Prepare Marinade: In a large bowl or jar, whisk together olive oil, lemon juice, red wine vinegar, Greek yogurt, finely minced garlic, onion powder, garlic powder, dried basil, oregano, parsley, chives, salt, and black pepper until well combined into a smooth marinade.
  2. Marinate Chicken: Add the cubed chicken breast to the marinade and toss until fully coated. Cover the bowl and refrigerate for at least 1 hour or up to 6 hours to marinate thoroughly for best flavor.
  3. Thread Chicken on Skewers: Soak wooden skewers in water beforehand to prevent burning. Thread the marinated chicken cubes onto 6 skewers, leaving a little space between each piece to ensure even cooking.
  4. Preheat Grill and Cook: Preheat the grill to medium-high heat. Grill the skewers for 6-7 minutes on each side, or until the chicken turns golden and reaches an internal temperature of 165°F (74°C), ensuring it is fully cooked.
  5. Finish with Butter or Olive Oil: After grilling, lightly brush the cooked skewers with melted butter or a drizzle of extra olive oil to add moisture and a shiny, appetizing glaze.
  6. Serve: Plate the chicken kabobs alongside tomato cucumber salad and tzatziki sauce. Garnish with fresh basil leaves and lemon wedges for squeezing over the top. Optionally, include grilled lemon slices for extra flavor and presentation.

Notes

  • Optional: Serve with a fresh tomato cucumber salad made from cucumbers, cherry tomatoes, red onion, olive oil, red wine vinegar, lemon juice, Italian seasoning, garlic, onion powder, salt, and pepper.
  • Skewers should be soaked in water before grilling to avoid burning.
  • Marinating time can be adjusted between 1 and 6 hours depending on desired flavor intensity.
  • For best grilling results, ensure the grill is preheated to medium-high heat before cooking.
  • You can substitute dairy Greek yogurt with a dairy-free alternative to keep the dish vegan-friendly except for the butter brushing step, which can be replaced with olive oil.
  • Use an instant-read thermometer to accurately check chicken doneness (165°F internal temperature).
  • For visual appeal, brush cooked kabobs with melted butter or olive oil to create a glistening finish before serving.
