  • 2 cups hazelnuts (240g)
  • 1/4 tsp pure vanilla extract
  • 1/4 cup cocoa powder
  • 1/3 cup sweetener of choice (such as sugar, honey, maple syrup, or a sugar substitute)
  • 1/4 tsp salt

Optional Ingredients for Texture

  • 1/2 cup milk of choice (dairy or plant-based) or 2 tbsp oil (such as hazelnut oil or neutral oil)

Instructions

  1. Roast the Hazelnuts: Preheat your oven to 400°F (200°C). Spread the hazelnuts evenly on a baking sheet and roast them for 6-8 minutes, or until they begin to brown and become fragrant. This enhances their flavor and makes it easier to remove the skins.
  2. Remove the Skins: Once roasted, rub the hazelnuts together inside a clean paper towel to remove most of the skins. Some skins may remain, which is perfectly fine and won’t affect the taste.
  3. Blend Hazelnuts into Butter: Transfer the roasted hazelnuts to a Vitamix blender or a food processor. Blend for several minutes—up to 20 minutes if using a food processor—until the nuts release their natural oils and transform into a creamy butter.
  4. Add Remaining Ingredients: Add the vanilla extract, cocoa powder, sweetener, and salt to the hazelnut butter. Continue blending for several more minutes until the mixture is smooth and consistently chocolatey, resembling Nutella.
  5. Adjust Consistency (Optional): If you prefer a thinner and creamier texture, gradually add your choice of milk or oil and blend again until fully incorporated and smooth.

  • You can use any sweetener you prefer, including sugar, honey, maple syrup, or sugar substitutes to suit your dietary needs.
  • Storage: Store homemade Nutella in an airtight container in the refrigerator for up to 2 weeks. Bring to room temperature before serving for easier spreading.
  • If you don’t have a high-speed blender like a Vitamix, blending may take longer; patience is key.
  • Roasting hazelnuts enhances flavor but if using pre-roasted nuts, you can skip the roasting step.
