These Healthy Peanut Butter Banana Cookies are a wholesome and delicious treat made with natural peanut butter, almond butter, ripe bananas, and a touch of cinnamon. They are quick to prepare, require minimal ingredients, and are naturally sweetened, making them a perfect guilt-free snack or dessert option.

Ingredients

Main Ingredients

  • 1/4 cup + 2 tablespoons natural peanut butter*
  • 2 tablespoons all natural almond butter (or swap for peanut butter)*
  • 1 small banana, mashed until no clumps remain
  • 1/2 teaspoon ground cinnamon
  • pinch of sea salt (optional)
  • 1 tablespoon pure maple syrup

Optional Mix-ins and Toppings

  • 1/4 cup mini dark chocolate chips
  • unsweetened shredded coconut
  • hemp seeds

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the cookies.
  2. Mash Banana: In a large mixing bowl, mash the banana until it is smooth with no clumps remaining. This forms the natural base and sweetness for the cookie dough.
  3. Mix Ingredients: Add the natural peanut butter, almond butter, and ground cinnamon to the mashed banana. Stir well until the mixture combines thoroughly and the dough forms into one cohesive ball, with no batter sticking to the sides of the bowl.
  4. Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent cookies from sticking during baking.
  5. Form Cookies: Roll or scoop the dough into 10 equal balls and place them evenly spaced on the prepared baking sheet. Use a fork to gently press down each ball, flattening them slightly into cookie shapes.
  6. Bake: Bake in the preheated oven for 10 minutes, or until the bottoms of the cookies are lightly browned.
  7. Add Sea Salt: Remove the cookies from the oven and sprinkle a pinch of sea salt on top if desired for extra flavor contrast.
  8. Cool and Serve: Allow the cookies to cool completely on the baking sheet before serving to let them set properly and enhance texture and flavor.

Notes

  • If your peanut butter or almond butter is runny, and the cookie batter is too loose to form balls, add 1 tablespoon of coconut flour at a time while stirring until the batter forms a ball.
  • Over-ripe or spotted brown bananas are best for this recipe. If bananas are under-ripe or green, wait to ripen or add 1-2 tablespoons of pure maple syrup during mashing for extra sweetness.
  • To increase sweetness, add 2 tablespoons of pure maple syrup or raw honey and mix in 1/4 cup of dark chocolate chips before baking.
