Ingredients

Ground Turkey:

1 pound ground turkey

Zucchinis:

2 medium zucchinis

Olive Oil:

1 tablespoon

Onion:

1⁄2 medium onion

Garlic:

2 cloves garlic

Dried Oregano:

1 teaspoon

Salt:

1⁄2 teaspoon

Black Pepper:

1⁄4 teaspoon

Crushed Red Pepper Flakes:

1⁄4 teaspoon

Chicken Broth:

1⁄4 cup

Grated Parmesan Cheese:

1⁄4 cup

Instructions

  1. Heat the olive oil: Heat the olive oil in a large skillet over medium heat.
  2. Sauté onion: Peel and finely chop the onion. Add the chopped onion to the skillet and sauté until soft and translucent, about 3-4 minutes.
  3. Add garlic: Peel and mince the garlic cloves. Add the minced garlic to the skillet and cook for another 30 seconds until fragrant.
  4. Cook turkey: Crumble the ground turkey into the skillet and cook for 6-8 minutes until fully browned.
  5. Prepare zucchini: Wash, trim, and slice the zucchinis. Add them to the skillet with the turkey.
  6. Season and simmer: Add seasonings, broth, and simmer until zucchini is tender.
  7. Finish with cheese: Sprinkle Parmesan cheese over the mixture and stir until melted.
  8. Adjust seasoning and serve: Taste and adjust seasoning as needed. Serve hot, garnished with extra Parmesan if desired.

Notes

  • The zucchini will release moisture during cooking, so be cautious with adding additional liquid.
  • For more flavor, consider using vegetable broth or white wine instead of chicken broth.
  • If you prefer a crispier texture, sauté the zucchini separately before adding it to the turkey.
  • Opt for freshly grated Parmesan for the best melting and texture.
  • A squeeze of lemon juice can add a refreshing touch to the dish.
