A hearty and nutritious Ground Turkey Sweet Potato Bake combining tender sweet potatoes, flavorful ground turkey, and zucchini, all topped with melted mozzarella cheese and savory spices. This easy-to-make casserole is perfect for a wholesome family dinner.

Ingredients

Vegetables & Protein

  • 2 medium sweet potatoes, peeled and diced into ½ inch cubes
  • 1 yellow onion, diced
  • 1 pound ground turkey
  • 2 medium zucchini, diced into ½ inch pieces

Seasonings & Oils

  • 3 tablespoons olive oil, divided
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Dairy & Optional

  • 1 cup shredded mozzarella cheese
  • Optional toppings – chopped parsley and lemon juice

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the sweet potatoes and onions.
  2. Prepare Sweet Potatoes & Onions: In a large 9×13 inch baking dish, combine the diced sweet potatoes and onions. Toss with 2 tablespoons of olive oil, smoked paprika, Italian seasoning, garlic powder, kosher salt, and black pepper until evenly coated. Place in the oven and bake for 30 minutes to soften and flavor the vegetables.
  3. Cook Ground Turkey: While the sweet potatoes bake, heat a large skillet over medium heat. Add the remaining 1 tablespoon of olive oil. When hot, add the ground turkey and cook for 4 to 5 minutes, stirring occasionally until the turkey is browned and cooked through.
  4. Add Turkey & Zucchini: Remove the baked sweet potatoes and onions from the oven. Stir in the cooked ground turkey and diced zucchini, mixing well to combine all ingredients evenly in the baking dish.
  5. Top with Cheese & Bake: Sprinkle 1 cup of shredded mozzarella cheese evenly over the mixture. Cover the baking dish with aluminum foil and bake for 15 minutes. Then remove the foil and bake for an additional 5 minutes to melt and lightly brown the cheese.
  6. Finish & Serve: Remove the dish from the oven and top with optional chopped parsley and a squeeze of fresh lemon juice for added brightness. Serve warm.

Notes

  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
  • Freezing: After baking, allow the casserole to cool completely and freeze for up to 3 months. To reheat, defrost in the refrigerator for 12 to 24 hours, then bake at 350°F for 10 to 15 minutes until heated through.
