Ingredients

Casserole Base

  • 4–5 medium potatoes, sliced super thin
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 1 tablespoon olive oil
  • ½ cup beef broth
  • 2 garlic cloves, minced
  • ¼ cup milk (optional)

Seasonings and Cheeses

  • Salt and black pepper, as needed
  • ½ cup Parmesan, grated
  • 1 teaspoon Italian blend seasoning
  • ½ teaspoon paprika powder
  • 1 ½ cups cheddar cheese, shredded
  • Fresh parsley for topping

Instructions

  1. Preheat and Prep Potatoes: Preheat your oven to 375°F (190°C). Wash, peel (optional), and slice potatoes into super thin, about ¼-inch thick slices so they cook evenly.
  2. Make Beef Mixture: Heat olive oil in a skillet over medium heat. Add chopped onions and minced garlic, sautéing until fragrant and softened. Add ground beef, then season with Italian seasoning, paprika, salt, and pepper. Cook, breaking up meat, until browned and no pink remains.
  3. Layer the Casserole: Lightly grease a baking dish. Arrange half the potato slices on the bottom, layer with half of the beef mixture, and sprinkle with half of the shredded cheddar cheese. Repeat layers with the remaining potatoes, beef, and cheddar. Pour beef broth (and milk if using) evenly over the entire casserole.
  4. Bake Covered: Cover the casserole dish tightly with foil and bake in the preheated oven for 35–40 minutes, allowing the potatoes to become tender and flavors to meld.
  5. Uncover and Finish Baking: Remove the foil, sprinkle grated Parmesan over the top, and bake uncovered for an additional 10 minutes until the top is golden and bubbly.
  6. Rest and Garnish: Let the casserole rest for about 5 minutes out of the oven. Sprinkle with chopped fresh parsley before serving. Cut into portions and enjoy!
