Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 3 tbsp unsalted butter, divided
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 cup heavy cream or half-and-half
  • 1 cup grated Parmesan cheese
  • 8 oz pasta (fettuccine or penne recommended)
  • Salt and pepper, to taste
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Add chicken bites, season with salt and pepper, and cook until golden and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add remaining butter and minced garlic. Sauté for about 1 minute until fragrant.

  5. Add cooked pasta and chicken back into the skillet. Toss to coat pasta and chicken evenly with the creamy sauce.
