Ingredients

  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 3 tbsp butter, divided
  • 4 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 cup heavy cream or half-and-half
  • 1 cup grated Parmesan cheese
  • 8 oz pasta (fettuccine, penne, or spaghetti)
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and half the butter over medium heat. Add the chicken bites, season with salt and pepper, and cook until golden and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant, making sure not to burn the garlic.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and the sauce is creamy.
  5. Return the chicken to the skillet and toss to coat in the sauce. Then add the cooked pasta and mix everything together until evenly combined and heated through.
  6. Garnish with fresh parsley or basil if desired, and serve immediately.
