This Fruit Pizza recipe is a delightful and colorful dessert that combines a chewy brown sugar cookie crust with a creamy cream cheese frosting and a variety of fresh fruits. It’s perfect for parties, gatherings, or a sweet treat anytime!

Ingredients

Brown Sugar Cookie Crust:

  • 1 1/2 cups all-purpose flour (plus extra for rolling)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Cream Cheese Frosting:

  • 1 (8 ounce) package low-fat cream cheese
  • 23 tablespoons maple syrup or honey (or 1 cup powdered sugar)
  • 1 teaspoon vanilla extract
  • pinch of fine sea salt

Toppings:

  • fresh strawberries (blueberries, raspberries, blackberries, or any other fruit that sounds good!)
  • optional fresh honey, for drizzling

Instructions

  1. Heat oven to 350°F. Grease the baking pan.
  2. Prepare the Brown Sugar Cookie Crust: Mix dry ingredients; beat butter and sugar, add extracts, combine dry ingredients, press dough into pan and bake.
  3. Make the Cream Cheese Frosting: Combine cream cheese, sweetener, vanilla, and salt.
  4. Assemble the Fruit Pizza: Spread frosting on cooled crust, add fruits, and drizzle with honey if desired.

Notes

  • Chill the dough before pressing it into the pan.
  • Keep fingers wet to prevent sticking while pressing the dough.
