Salad Ingredients
2 chopped avocados
1 diced bell pepper
1/2 cup diced onion
4 tbsp cilantro (omit if desired)
juice of 1 lime
1/8 tsp salt
black pepper to taste, if desired
optional: 1/2 cup black beans or diced cucumber
Instructions
Prepare Ingredients: Chop the avocados and dice the bell pepper and onion into bite-sized pieces. If using optional ingredients, rinse and drain black beans or dice cucumber to be ready for mixing.
Combine Ingredients: In a large bowl, add the chopped avocados, bell pepper, onion, cilantro, lime juice, salt, and black pepper. Add optional black beans or cucumber if desired.
Mix and Serve: Gently toss all ingredients together until well combined, being careful not to mash the avocado. Serve the salad cold immediately for the best flavor and texture.
Store Leftovers: Place any leftovers in a covered container and refrigerate. The salad can be stored safely for up to four days.
Notes
For extra protein, add black beans as an optional ingredient.
The salad is best eaten fresh but can be refrigerated to maintain freshness for up to four days.
Omit cilantro if you do not like the flavor or have an allergy.
Adjust salt and pepper to taste based on preference.
To prevent avocado browning, adding lime juice is essential.
