A refreshing and healthy avocado salad featuring ripe avocados, crisp bell pepper, and a zesty lime dressing, perfect as a light side dish or nutritious snack.

Ingredients

Salad Ingredients

  • 2 chopped avocados
  • 1 diced bell pepper
  • 1/2 cup diced onion
  • 4 tbsp cilantro (omit if desired)
  • juice of 1 lime
  • 1/8 tsp salt
  • black pepper to taste, if desired
  • optional: 1/2 cup black beans or diced cucumber

Instructions

  1. Prepare Ingredients: Chop the avocados and dice the bell pepper and onion into bite-sized pieces. If using optional ingredients, rinse and drain black beans or dice cucumber to be ready for mixing.
  2. Combine Ingredients: In a large bowl, add the chopped avocados, bell pepper, onion, cilantro, lime juice, salt, and black pepper. Add optional black beans or cucumber if desired.
  3. Mix and Serve: Gently toss all ingredients together until well combined, being careful not to mash the avocado. Serve the salad cold immediately for the best flavor and texture.
  4. Store Leftovers: Place any leftovers in a covered container and refrigerate. The salad can be stored safely for up to four days.

Notes

  • For extra protein, add black beans as an optional ingredient.
  • The salad is best eaten fresh but can be refrigerated to maintain freshness for up to four days.
  • Omit cilantro if you do not like the flavor or have an allergy.
  • Adjust salt and pepper to taste based on preference.
  • To prevent avocado browning, adding lime juice is essential.
