Easy Weeknight Meatball Subs are a delicious and comforting sandwich featuring homemade or frozen meatballs simmered in marinara sauce, topped with melted mozzarella cheese, and served in soft hot dog buns. Perfect for a quick and satisfying dinner any night of the week.

Ingredients

Homemade Meatballs

  • 1 pound ground beef (95% lean)
  • ½ cup panko breadcrumbs
  • 1 large egg
  • 1-2 garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt

Meatball Subs

  • 24 meatballs (homemade or frozen)
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • 8 hot dog buns
  • 1 ½ cups shredded mozzarella cheese

Instructions

  1. Prepare Homemade Meatballs: In a large bowl, mix the ground beef, panko breadcrumbs, egg, minced garlic, Italian seasoning, red pepper flakes, and salt until well combined. Form the mixture into 24 evenly sized meatballs.
  2. Brown the Meatballs: Heat olive oil in a large skillet over medium-high heat. When the oil shimmers, add the meatballs. Cook, turning every minute or so, to evenly brown all sides.
  3. Simmer Meatballs in Sauce: Once browned, reduce heat to low, slowly pour in the marinara sauce, then increase to medium-low. Cover the skillet with a lid and cook for 15 minutes, or until meatballs reach an internal temperature of 160°F. If using frozen meatballs, heat marinara in skillet until simmering, add frozen meatballs, cover and cook 25 minutes until heated through.
  4. Prepare Buns for Broiling: While the meatballs are cooking, place the hot dog buns on a baking sheet. Position the oven rack about 6 inches below the broiler and preheat the broiler.
  5. Assemble Meatball Subs: Place 3 meatballs in each bun. Spoon some marinara sauce over the meatballs, then top with shredded mozzarella cheese.
  6. Broil the Subs: Place the assembled subs under the broiler for 2-3 minutes, watching carefully to melt the cheese without burning the buns.
