Easy Taco Soup is a hearty and flavorful dish that can be made quickly on the stove or in a slow cooker. Packed with ground beef, beans, and a variety of spices, this soup is perfect for a cozy weeknight meal.

Ingredients

Main Ingredients:

  • 1 pound (500g) lean ground beef
  • 1 small onion, chopped
  • 45 cloves garlic, minced

Additional Ingredients:

  • 4 cups (946ml) beef or chicken broth or stock
  • 1 (15 oz) (432g) corn, drained
  • 1 (15 oz) (425g) black beans, drained and rinsed
  • 1 (15 oz) (425g) chili beans in chili sauce
  • 1 (28 oz) (793g) crushed tomatoes
  • 1 (4 oz) (113g) chopped green chiles
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano, onion powder, and garlic powder
  • Salt, pepper, and cayenne pepper to taste

Instructions

  1. STOVE TOP VERSION: In a large dutch oven or pot, brown the ground beef and onions until the meat is no longer pink. Add the garlic and cook for 2 minutes.
  2. Add the remaining ingredients. Cover with a lid and simmer for 15 minutes. Serve with your favorite toppings. Can be simmered longer if desired, stirring occasionally.
  3. SLOW COOKER VERSION: Place raw ground beef in the bottom of the crockpot and break it up into small chunks (or brown it first). Add all other ingredients except toppings and stir together.
  4. Cover with a lid and cook on high for 4-6 hours or low for 8-10 hours. Serve with desired toppings.

Notes

  • You can customize this soup with toppings like shredded cheese, sour cream, avocado, or tortilla strips.
  • This soup freezes well, so it’s great for meal prep or leftovers.
