A delightful and easy-to-make flourless oatmeal carrot cake recipe that is both healthy and delicious. This moist and flavorful cake is refined sugar-free and perfect for a sweet treat with tea, coffee, or as a snack for kids and adults alike.

Ingredients

Eggs

  • 2 eggs

Honey

  • ½ cup honey

Carrots

  • 2 carrots, shredded

Oats

  • 1 cup oats

Baking soda

  • 1/2 tsp baking soda

Cinnamon

  • 1 tbsp cinnamon

Butter

  • 1/4 cup butter, room temperature

Vanilla

  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 180C/300F.

    Put all ingredients, except the shredded carrot into a bowl and blend with an immersion blender. If you don’t have an immersion blender, place the ingredients into a blender and blend until smooth.

  2. Stir in the shredded carrot.
  3. Line a small baking pan with parchment paper (I used 7×7 – around 18cm).

    Spread the mixture in the pan and bake at 180C/350F for 20-30 minutes or until a toothpick inserted in the center comes out clean.

  4. Let the cake cool off and slice and enjoy!

Notes

  • This carrot cake is super tasty on its own, but if you’d like to make a super easy frosting grab some cream cheese, honey, and vanilla, mix together and spread over the cake once it’s cooled off.
