Ingredients

For the Batter:

  • 1 1/2 cups flour
  • 3/4 cup cornstarch
  • 1 1/2 tablespoons baking powder
  • 1 1/2 cups cold club soda
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon white pepper

For the Shrimp:

  • Canola oil for frying
  • 1 pound shrimp, deveined and shells removed (2125 count)

For the Sauce:

  • 1 cup mayonnaise
  • 1 tablespoon sugar
  • 1 tablespoon sriracha

Instructions

  1. Prepare the Oil: Heat a pot of oil to 375 degrees F, at least 3 inches high.
  2. Make the Batter: Mix flour, cornstarch, baking powder, salt, and pepper. Dredge shrimp in the mixture and shake off excess.
  3. Coat Shrimp: Whisk club soda into the flour mix. Dip shrimp in batter and fry until golden brown, about 2-3 minutes.
  4. Create the Sauce: Whisk mayonnaise, sugar, and sriracha. Toss the fried shrimp in the sauce before serving.
