Ingredients

  • 4 large potatoes
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons white vinegar
  • 1/4 cup chopped red onion
  • 1/4 cup chopped celery
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 hard-boiled eggs, chopped (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Boil the potatoes: Place the potatoes in a large pot, cover with water, and bring to a boil. Once boiling, lower the heat and simmer for 10-15 minutes or until the potatoes are easily pierced with a fork. Drain the water and allow the potatoes to cool slightly before cutting them into cubes.
  2. Prepare the dressing: In a large mixing bowl, combine the mayonnaise, Dijon mustard, white vinegar, salt, and black pepper. Stir until smooth and well combined.
  3. Combine ingredients: Add the cooled potatoes, red onion, celery, and chopped hard-boiled eggs (if using) to the bowl with the dressing. Gently toss to coat everything evenly.
  4. Chill: Cover the bowl with plastic wrap and refrigerate for at least one hour to allow the flavors to blend together.
  5. Garnish: When ready to serve, garnish with fresh parsley, if desired.
