Date Caramel Apple Slices are a delightful and healthy snack featuring crisp apple rounds topped with luscious date caramel sauce, crunchy walnuts, pistachios, and drizzled melted bittersweet chocolate. This no-bake treat combines natural sweetness and vibrant textures, perfect for a nutritious dessert or snack.

Ingredients

Date Caramel Sauce

  • 1 cup pitted Medjool dates, soaked and blended
  • 2 tablespoons water (adjust to desired consistency)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Apple Slices and Toppings

  • 2 large Honeycrisp apples, cored and sliced into 1/4-inch rounds
  • 1/2 cup crushed walnuts
  • 1/2 cup crushed pistachios
  • 1/2 cup bittersweet chocolate chips (vegan chocolate can be used), melted

Instructions

  1. Prepare Date Caramel Sauce: To make the date caramel, soak 1 cup of pitted Medjool dates in warm water for about 10 minutes to soften. Blend the soaked dates with 2 tablespoons of water, 1 teaspoon vanilla extract, and a pinch of salt until a smooth, creamy caramel sauce forms. Adjust water to achieve desired consistency.
  2. Prep the Apple Slices: Line a large rimmed baking sheet with parchment paper. Core the apples using an apple corer, then slice each apple into thin rounds about 1/4 inch thick. Arrange the apple slices evenly on the prepared baking sheet.
  3. Add Toppings: Spread a generous layer of the date caramel sauce on top of each apple slice. Sprinkle the crushed walnuts and pistachios evenly over the caramel. Finally, drizzle the melted bittersweet chocolate over each slice for an indulgent finish.
  4. Chill to Set: Place the baking sheet in the freezer for about 10 to 15 minutes, or until the chocolate has set firmly. Once set, transfer the apple slices into a tightly closed container and store them in the refrigerator until ready to serve.

Notes

  • Use any apple variety you prefer, though crisp apples like Honeycrisp or Fuji work best for texture contrast.
  • For a vegan-friendly version, ensure to use vegan chocolate chips.
  • The date caramel sauce can be stored in an airtight container in the fridge for up to a week.
  • These apple slices are best enjoyed within 2 days of preparation for optimal freshness.
  • Optional: Sprinkle a little sea salt on top for a sweet and salty balance.
