With the convenience of a crockpot, all ingredients simmer together to develop rich flavors and a satisfying texture.

Ingredients

Protein & Vegetables

  • 3 boneless, skinless chicken breasts, cubed
  • 2 cups broccoli florets

Dry Ingredients & Seasonings

  • 2 cups uncooked long grain white rice
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Liquids & Canned Goods

  • 1 can condensed cream of chicken soup (10.5 ounces)
  • 1 can condensed cream of mushroom soup (10.5 ounces)
  • 3 cups chicken broth

Dairy

  • 1 cup shredded cheddar cheese

Instructions

  1. Combine ingredients in crockpot: Place the cubed chicken breasts and uncooked long grain rice into the crockpot. Add the condensed cream of chicken soup, condensed cream of mushroom soup, chicken broth, garlic powder, onion powder, salt, and pepper. Stir well to evenly distribute all ingredients.
  2. Cook on low heat: Cover the crockpot and cook on the LOW setting for 3 ½ to 4 hours. This slow cooking ensures the chicken becomes tender and the rice absorbs all the flavors.
  3. Add broccoli and continue cooking: After the initial cook time, stir in the broccoli florets. Cover again and cook for an additional hour or until the broccoli is tender and the chicken and rice are fully cooked through.
  4. Add cheese and melt: Sprinkle the shredded cheddar cheese evenly over the casserole. Cover and let it sit for about 5 minutes to allow the cheese to melt perfectly. Serve hot and enjoy your hearty casserole!

Notes

  • Use long grain white rice as it retains its shape well during slow cooking without becoming mushy.
  • Avoid quick-cooking or instant rice varieties, which can result in a mushy texture.
  • Add broccoli later in the cooking process to keep it vibrant, tender, and avoid overcooking.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
