Instructions

  1. Prepare the Filling: In a large mixing bowl, combine the ground chicken, crumbled feta cheese, finely chopped red onion, minced garlic, lemon juice, lemon zest, and fresh herbs—mint and parsley. Season the mixture with salt to taste and mix thoroughly until fully incorporated.
  2. Stuff the Pita: Slice each pita bread in half to create pockets, then carefully open them without tearing. Spoon the chicken and feta filling generously inside each pita pocket and seal the edges gently to contain the filling.
  3. Pan-Fry the Pita: Heat olive oil in a large skillet over medium heat. When the oil is hot, place the stuffed pita pockets in the skillet. Cook each side for 3-4 minutes or until they turn a golden brown and develop a crispy exterior.
  4. Bake for Extra Crispiness: Preheat your oven to 180°C (350°F). After frying, transfer the crisped pita pockets onto a baking sheet and bake in the oven for about 10-15 minutes. This step enhances the crispness and finishes cooking the filling evenly.
