Ingredients

  • 4 salmon fillets
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 tbsp butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach, fresh
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 tsp Italian seasoning
  • 1 tbsp lemon juice
  • 1/4 cup parmesan cheese, grated

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper.
  2. Place the salmon fillets skin-side down in the skillet and cook for 4-5 minutes per side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Add garlic and cook for 1-2 minutes, until fragrant.
  4. Stir in the heavy cream, spinach, sun-dried tomatoes, and Italian seasoning. Let it simmer for 3-4 minutes, allowing the sauce to thicken.
  5. Stir in lemon juice and parmesan cheese until the sauce is smooth.
  6. Return the salmon to the skillet and spoon the creamy sauce over the fillets. Simmer for another 2 minutes.
  7. Serve immediately with your favorite side dish, and enjoy!
