Ingredients

Dry Ingredients:

  • 1 cup Kodiak Power Cakes Flapjack and Waffle Mix (Buttermilk)
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 tsp ground cinnamon

Wet Ingredients:

  • ¼ cup butter
  • ¼ cup avocado or extra virgin olive oil
  • ½ cup brown sugar (packed)
  • ¼ cup white sugar
  • 1 cup plain Greek yogurt
  • ½ cup milk
  • 2 eggs
  • 1 tsp vanilla extract

Cinnamon-Sugar Topping:

  • 2 tbsp butter
  • 3 tbsp white sugar
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 350℉. Line your muffin tins with liners or generously spray with cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the Kodiak mix, all-purpose flour, baking soda, baking powder, salt, and cinnamon until thoroughly combined. Set aside.
  3. Melt Butter and Mix Wet Ingredients: In a medium bowl, microwave ¼ cup butter for about 35-40 seconds until melted, stirring halfway through. Add avocado or olive oil, brown sugar, and white sugar to the melted butter and stir until smooth.
  4. Add Dairy and Eggs: To the wet mixture, add the plain Greek yogurt, milk, eggs, and vanilla extract. Stir until everything is fully combined and smooth.
  5. Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl with dry ingredients. Gently fold with a spatula or spoon until just combined—avoid overmixing to keep muffins tender.
  6. Fill Muffin Cups: Spoon the batter evenly into the prepared muffin cups, filling each almost to the top.
  7. Bake Muffins: Bake the muffins at 350℉ for 18-22 minutes, checking at 19 minutes with a toothpick. The muffins are ready when a toothpick inserted into the center comes out clean.
  8. Prepare Cinnamon-Sugar Topping: While muffins bake, mix 3 tablespoons of white sugar with 1 tablespoon cinnamon in a small bowl. Melt 2 tablespoons of butter in another small bowl.
  9. Apply Topping: Once muffins are baked and still warm, brush the top of each muffin lightly with melted butter then sprinkle generously with the cinnamon-sugar mix. Repeat to coat all muffins evenly.
