A decadent dessert layering rich vanilla ice cream with homemade chocolate chip cookie dough and soft cookie layers, perfect for celebrations or indulgent treats.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips (for cookie dough)
  • 1 quart vanilla ice cream, softened
  • 1/2 cup mini chocolate chips (to fold into ice cream)

Instructions

  1. Preheat the oven to 350°F (175°C). Line two 8-inch round cake pans with parchment paper and lightly grease.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, beat the softened butter with brown sugar and granulated sugar until creamy and fluffy. Add the egg and vanilla extract, mixing well.
  4. Gradually add the dry ingredients to the wet, mixing until just combined. Stir in 1 cup of mini chocolate chips.
  5. Divide the cookie dough evenly between the prepared pans and press it into an even layer. Bake for 12-15 minutes or until the edges are golden but the center is still soft. Allow to cool completely.
  6. Once cooled, remove one cookie layer from the pan and place it on a serving plate. Spread half the softened vanilla ice cream over the cookie layer. Sprinkle half the mini chocolate chips on top.
  7. Add the second cookie layer on top and spread the remaining ice cream over it. Sprinkle the remaining mini chocolate chips.
  8. Freeze the assembled cake for at least 4 hours, preferably overnight, to let it set fully.
  9. Before serving, let the cake sit at room temperature for about 10 minutes to soften slightly for easier slicing.
