A simple and comforting dish featuring tender, juicy chicken served over perfectly buttered egg noodles, ready in under 30 minutes.

Ingredients

  • Boneless, skinless chicken breasts or thighs (about 1 lb)
  • Salt and pepper, to taste
  • Garlic powder, to taste
  • 2 tbsp olive oil or butter (for cooking chicken)
  • 8 oz egg noodles
  • 3 tbsp butter (for the noodles)
  • Fresh parsley, chopped (optional, for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  1. Season the chicken with salt, pepper, and garlic powder.
  2. Heat olive oil or butter in a skillet over medium heat and cook the chicken until golden brown and cooked through, about 6-8 minutes per side depending on thickness. Remove the chicken and keep warm.
  3. Meanwhile, cook the egg noodles according to package instructions until al dente. Drain the noodles.
  4. Return the noodles to the pot and stir in butter until melted and noodles are well coated. Season with salt and pepper to taste.
  5. Serve the chicken over the buttered noodles. Garnish with fresh parsley and Parmesan if desired.

Notes

  • Can add sautéed mushrooms or steamed broccoli for extra flavor and nutrition.
  • Using chicken thighs adds more juiciness compared to breasts.
  • For a brighter flavor, add a splash of chicken broth or a squeeze of lemon juice to the noodles.
  • Leftovers keep well in an airtight container in the fridge for up to 3 days.
  • Reheat gently with a splash of water or broth to prevent drying out.
