Ingredients

Flatbread Base

  • 2 gluten free flatbreads or regular flatbread (if not gluten free)

Spread

  • 6 Tbsp. basil pesto

Toppings

  • 1 cup grape tomatoes, halved or quartered
  • 3 cups rotisserie chicken, diced or shredded
  • 1 cup fresh mozzarella cheese, cut into chunks or shredded (or cheese of choice such as Fontina or Provolone)

Garnish

  • 1 Tbsp. balsamic glaze
  • Fresh basil leaves

Instructions

  1. Preheat Oven: Heat your oven to 400 degrees Fahrenheit to prepare for baking the flatbread pizza.
  2. Prepare Tomatoes: Cut the grape or cherry tomatoes into halves or quarters based on your preferred size for the topping.
  3. Prepare Cheese: Cut fresh mozzarella into chunks or shred the cheese. You may also substitute with Fontina or Provolone for a different melt and flavor.
  4. Prepare Chicken: Dice or shred the rotisserie chicken breast portion. Leftover roasted or grilled chicken can be used as an alternative.
  5. Assemble Flatbreads: Place the flatbreads onto an ungreased large baking sheet. Spread 3 tablespoons of basil pesto evenly over each flatbread using a knife.
