Chicken foil packets are a simple, customizable, and convenient way to prepare a flavorful meal with minimal cleanup. Chicken stays juicy and tender, absorbing delicious spices and vegetables, making it a perfect option for grilling or baking.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup baby carrots, sliced
  • 1 cup red bell pepper, chopped
  • 1 medium zucchini, sliced
  • 1 tablespoon fresh parsley (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) or prepare your grill to medium-high heat.
  2. Lay out four large sheets of aluminum foil, one for each packet.
  3. Drizzle olive oil over each chicken breast and season generously with garlic powder, onion powder, paprika, thyme, salt, and pepper.
  4. Place one seasoned chicken breast at the center of each foil sheet.
  5. Add a handful of carrots, bell pepper, and zucchini on top of the chicken in each packet.
  6. Fold the edges of the foil over the chicken and vegetables, sealing it tightly into a packet.
  7. If baking, place the foil packets on a baking sheet and cook for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). If grilling, cook over medium-high heat for 20-25 minutes, flipping the packets halfway through.
  8. Once done, carefully open the foil packet, being cautious of the hot steam, and serve. Garnish with fresh parsley, if desired.

  • Feel free to swap vegetables for others like broccoli, mushrooms, or sweet potatoes.
  • Experiment with seasonings like Italian seasoning, lemon zest, or chili powder for different flavors.
  • Add a sprinkle of shredded cheese, such as cheddar or mozzarella, toward the last 5 minutes of cooking for a creamy twist.
