Cheesy Taco Spaghetti is a flavorful fusion dish combining classic spaghetti with the bold, zesty taste of taco-seasoned ground beef, creamy cheddar cheese, and a touch of salsa and cream for a rich, comforting dinner that’s quick and easy to prepare.

Ingredients

Pasta

  • 10 ounces spaghetti

Meat & Vegetables

  • 1 pound lean ground beef
  • 1 medium onion, diced

Seasonings & Sauces

  • 1 ounce package taco seasoning
  • 1 ½ cups salsa
  • ¾ cup water
  • ¼ cup heavy cream

Cheese

  • 2 cups shredded cheddar cheese

Instructions

  1. Cook the spaghetti: Bring a medium pot of water to a rolling boil. Add the spaghetti and cook according to the package directions, usually around 8-10 minutes until al dente. Drain the spaghetti well and set aside.
  2. Brown the beef and onions: Heat a large pot over medium-high heat. Add the lean ground beef and diced onion, cooking for 6-7 minutes. Crumble the beef as it cooks and continue until the meat is no longer pink and onions are softened.
  3. Add seasoning and liquids: Stir in the taco seasoning and cook for about 30 seconds to bloom the spices. Then add the salsa, water, and heavy cream. Increase heat and bring the mixture to a boil, cooking for 2-3 minutes until the sauce slightly thickens.
  4. Melt cheese and combine pasta: Reduce the heat to low. Add the shredded cheddar cheese and gently fold it into the sauce until melted and creamy. Finally, stir in the cooked spaghetti thoroughly to combine all the flavors.
  5. Serve and enjoy: Once everything is well mixed and heated through, serve hot for a delicious twist on traditional pasta.

Notes

  • Adjust the amount of salsa depending on your desired spice level and moisture.
  • For extra creaminess, add a splash more heavy cream or a dollop of sour cream when serving.
  • Top with fresh cilantro, diced tomatoes, or sliced jalapeños for added freshness and heat.
  • Use gluten-free spaghetti to make this dish gluten-free.
