Ingredients
6 medium-sized russet potatoes, peeled and cubed
1 lb smoked sausage, sliced
1 medium onion, chopped
3 cloves garlic, minced
1 cup chicken broth
3 cups whole milk
1 cup heavy cream
2 tablespoons butter
1 tablespoon Cajun seasoning
1/2 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons flour (for thickening)
Green onions or parsley for garnish (optional)
Instructions
In a large pot, melt the butter over medium heat. Add the smoked sausage and cook until browned, about 5-7 minutes.
Add the chopped onion and garlic to the pot, cooking for an additional 2-3 minutes until softened and fragrant.
Stir in the flour and cook for 1 minute to form a roux, which will help thicken the soup.
Gradually add the chicken broth, stirring constantly to avoid lumps. Then add the milk, heavy cream, Cajun seasoning, and smoked paprika. Bring to a simmer.
Add the cubed potatoes to the pot, stirring well. Let the soup simmer for 20-25 minutes or until the potatoes are tender.
Season with salt and pepper to taste. If you prefer a thicker soup, use a potato masher to mash some of the potatoes in the pot.
Once the potatoes are tender and the soup is thickened to your liking, remove from heat.
Serve hot, garnished with green onions or parsley if desired.
Notes
Vegetarian: Swap out the smoked sausage for a vegetarian sausage or simply leave it out for a meat-free version.
Spicy: Add more Cajun seasoning or chopped jalapeños for extra heat.
Cheesy: Stir in shredded cheddar cheese for a richer flavor.
