Buffalo Chicken Totchos combine crispy tater tots with a creamy, spicy buffalo chicken topping for a bold, crowd-pleasing appetizer or main dish.

Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1 tablespoon green goddess seasoning (or your favorite seasoning blend)
  • Salt and pepper, to taste
  • 2-pound bag frozen tater tots
  • 1 rotisserie chicken, shredded
  • 8 ounces cream cheese
  • 1 cup buffalo sauce (Frank’s RedHot preferred)
  • 2 tablespoons mayonnaise
  • 1 packet ranch seasoning
  • 1½ cups shredded Colby Jack cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup diced celery
  • ½ cup diced carrots
  • ¼ cup sliced green onions
  • Toppings:
  • ½ cup shredded white cheddar or mozzarella cheese
  • 2 tablespoons sliced green onions
  • 2 tablespoons ranch dressing
  • ¼ cup crumbled feta cheese

Instructions

  1. Preheat oven to 350°F (or according to tater tots package instructions).
  2. Toss tater tots with olive oil, cumin, chili powder, green goddess seasoning, salt, and pepper until evenly coated. Spread on greased baking sheet and bake about 35 minutes until golden and crispy.
  3. Meanwhile, combine cream cheese, buffalo sauce, mayonnaise, and ranch seasoning in a bowl; blend until smooth with a hand mixer.
  4. Fold shredded chicken, Colby Jack cheese, mozzarella cheese, diced celery, and diced carrots into the buffalo sauce mixture.
  5. Remove baked tater tots from oven. In a greased cast-iron skillet or baking dish, layer half the tots evenly.
  6. Spread half the buffalo chicken mixture over tots. Add remaining tots on top, then the rest of the buffalo chicken mixture.
  7. Sprinkle with additional shredded cheese and sliced green onions.
  8. Bake for 25-30 minutes at 350°F until cheese is melted and bubbly.
  9. Remove from oven, drizzle with ranch dressing, and sprinkle with crumbled feta and extra green onions before serving.

  • Use cooked shredded chicken breasts or thighs instead of rotisserie chicken if desired.
  • Try different cheeses like cheddar, pepper jack, or Monterey Jack for varied flavor.
