Blueberry Breakfast Quesadilla

A delicious and quick breakfast quesadilla combining fresh blueberries, cream cheese, and melted cheese for a sweet and savory treat.

Ingredients

  • 2 flour tortillas
  • 1/2 cup cream cheese, softened
  • 1/4 cup blueberry jam or preserves
  • 1/2 cup fresh blueberries
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • 1 tbsp butter (for cooking)

Instructions

  1. Spread a thin layer of softened cream cheese on one side of each tortilla.
  2. Add a spoonful of blueberry jam or preserves on top of the cream cheese, spreading it evenly.
  3. Scatter fresh blueberries over the jam.
  4. Sprinkle both mozzarella and cheddar cheese evenly over the blueberries.
  5. Place the second tortilla on top, pressing it down lightly to help it stick.
  6. In a large skillet, melt the butter over medium heat.
  7. Place the quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden and the cheese inside has melted.
  8. Once done, remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges.

Notes

  • Store leftovers in an airtight container in the fridge for up to 2 days.
  • Reheat in a skillet for a crispy texture.
  • For a dairy-free version, use plant-based alternatives for cream cheese, cheese, and butter.
