Ingredients

  • 2 chicken breasts or thighs, cut into bite-sized pieces
  • 1/2 cup cornstarch or flour for coating
  • Vegetable oil for frying
  • 2 cups cooked white or brown rice
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup sliced cucumbers
  • 1/2 cup shredded carrots
  • 2 green onions, chopped
  • 2 tbsp chopped cilantro (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 12 tbsp sriracha or other hot sauce
  • 1 tbsp honey or sugar
  • 1 tbsp lime juice

Instructions

  1. Prepare the rice according to package instructions and set aside.
  2. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth to make the bang bang sauce.
  3. Coat the chicken pieces evenly in cornstarch or flour.
  4. Heat oil in a skillet over medium-high heat and fry the chicken until golden and cooked through, about 5-7 minutes. Drain on paper towels.
  5. Assemble bowls by layering rice, shredded lettuce, cucumbers, carrots, and chicken.
  6. Drizzle the bang bang sauce generously over the bowl.
  7. Garnish with green onions and cilantro if desired. Serve immediately.
