These Baked Garlic Parmesan Potato Wedges are a delicious, healthier twist on classic fries. Seasoned with garlic, Italian herbs, and Parmesan cheese, they are baked until crispy on the outside and tender inside, perfect as a side dish or snack.

Ingredients

  • 34 large russet potatoes, sliced into wedges
  • 4 tablespoons olive oil
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons Italian seasoning
  • ½ cup shredded Parmesan cheese
  • Optional: fresh parsley (or cilantro) for garnish
  • Optional: ranch or blue cheese dressing for dipping

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a large baking sheet and set aside.
  2. Place the potato wedges in a large bowl. Drizzle with olive oil and toss to coat evenly.
  3. In a small bowl, whisk together salt, garlic powder, and Italian seasoning.
  4. Sprinkle the potato wedges with shredded Parmesan cheese, tossing to coat. Then, sprinkle with the seasoning mixture.
  5. Arrange the seasoned wedges on the prepared baking sheet in a single layer, skin-side down.
  6. Bake for 25-35 minutes until the potatoes are fork-tender and golden brown.
  7. Garnish with freshly chopped parsley and serve with your choice of dipping sauce.

Notes

  • For extra crispiness, soak potato wedges in cold water for 30 minutes before seasoning and dry thoroughly.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Reheat in a preheated oven at 350°F (175°C) for about 10 minutes to regain crispiness.
  • Variations include adding paprika or chili powder for spice, fresh herbs for aroma, mixing cheeses for richer flavor, or using fresh minced garlic.
