Ingredients

Vegetables & Herbs

  • 5-6 scallions, thinly sliced
  • 1 pound (about 500g) green peas, frozen or canned
  • 38 oz (800g) canned artichokes, drained
  • 1/4 cup finely chopped fresh dill

Liquids & Oils

  • 1/4 cup olive oil
  • 3-4 tablespoons fresh lemon juice
  • 1/4 cup water, or more as needed

Seasonings

  • salt, to taste
  • freshly cracked black pepper, to taste

Instructions

  1. Sauté Scallions: Add the thinly sliced scallions and olive oil to a pot and cook over medium heat until softened, about 3-5 minutes. Season lightly with a pinch of salt to enhance flavor.
  2. Cook Peas & Dill: Add the green peas, chopped fresh dill, salt, and freshly cracked black pepper to the pot. Continue cooking over medium heat for 8-10 minutes until the peas are tender and fragrant.
  3. Add Artichokes & Simmer: Stir in the drained artichoke hearts, season again with salt and pepper, then pour in the water and fresh lemon juice. Warm the stew through on low heat, making sure all ingredients are heated evenly. Taste and adjust seasonings as needed before serving.
