  • ½ cup scallions (white part), thinly sliced
  • 1½ tbsp minced garlic (4 cloves)
  • ¼ cup vegetable broth (low-sodium)
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tbsp Korean chilli powder/flakes (e.g., Gochugaru)

Garnish

  • ¼ cup scallions (green part), thinly sliced
  • 1 tbsp toasted sesame seeds
  • Extra chilli flakes (optional)

Instructions

  1. Prepare the sauce base: Heat a small frying pan over very low heat. Add cooking oil, the white part of the scallions, and minced garlic. Sauté gently for 5 minutes, stirring constantly to prevent burning and to release the aromatic flavors.
  2. Simmer the sauce: Pour in vegetable broth, light soy sauce, dark soy sauce, Chinese black vinegar, and Korean chilli powder or flakes. Increase the heat to medium-low and simmer the sauce for 5 minutes, stirring occasionally to meld the flavors together.
  3. Cook the noodles: In a separate pot, bring water to a boil and cook the ribbon noodles according to the package instructions until al dente. Drain thoroughly to remove excess water.
  4. Toss noodles in sauce: Combine the drained noodles with the garlic chilli sauce in the frying pan or a mixing bowl. Toss well to ensure all noodles are evenly coated with the aromatic sauce.
  5. Garnish and serve: Transfer the noodles to serving plates and garnish with the green part of the scallions, toasted sesame seeds, and extra chilli flakes if desired. Serve hot and enjoy the vibrant, spicy flavors.
