Ingredients

Salad:

  • 2 cups chopped strawberries
  • 2 cups chopped cucumbers (Persian or mini cucumbers)
  • 1/2 cup crumbled feta cheese
  • 510 leaves fresh basil, chopped
  • 510 leaves fresh mint, chopped
  • Salt + pepper, to taste

Lemon Dressing:

  • 2 Tbsp olive oil
  • 1/2 a lemon, juiced
  • 1/2 tsp honey
  • 1/2 tsp white wine vinegar or apple cider vinegar
  • 1/4 tsp garlic powder
  • Salt + pepper, to taste

Instructions

  1. Lemon Dressing: Combine all dressing ingredients in a bowl or jar. Whisk or shake to combine. Set aside.
  2. Salad: In a serving bowl, combine strawberries, cucumbers, feta, basil, and mint. Pour dressing over the salad and toss to combine. Adjust seasonings. Serve immediately.
